Our Origins

The Bonollo family began experimenting with the centuries-old art of grappa making as early as the 19th century in the Vicenza Prealps.

The first evidence of the family distilling professionally dates back to 1908, the date printed on the copy of the oldest surviving production document. This was also the year when Giuseppe Bonollo, founder of the most important Grappa dynasty existing today, started using the then innovative steam stills, a system which allowed grappa to be produced with more characterful organoleptic properties than traditional methods.

Even back then, the Bonollo family was pioneering the use of modern technologies. In 1951, Giuseppe’s son, Umberto Bonollo, decided to continue his father’s business on his own and with his children, electing to establish the company’s headquarters near Padua, a geographical area with long traditions in grappa production as well as an area particularly rich in high-quality raw ingredients.
